Potato Tartar Purée
- 1 lbs Russet Potato Boil and Purée
- 4 oz Crème Fraiche
- 2 tbsp Cornichons (Tiny Pickles) Finely diced
- 2 tbsp Shallots Diced
- 2 tbsp Capers Diced
- 1 tbsp Parsley Chopped
- Lemon Zest To Taste
- Salt & Pepper To Taste
- Fold all other ingredients into potato purée . Season to taste.
